Monday 21st and Tuesday 22nd April at 11am in the Seminar Theatre at the Taste of the West Trade Show, Westpoint, Exeter

The workshop is designed to give ideas and guidance to help understand the carcase and the supply chain better and develop new innovative methods of utilising the whole carcase, including the cheaper cuts. Therefore ultimately adding value and increasing profit.

Who is speaking?

Philip Dennis Food Service

Nigel Yeo Catering Butchery Manager for Philip Dennis Foodservice will be running the workshops illustrating the opportunities of adding value with their Exmoor Beef Range and their award-winning Exmoor Burger. There will be a fascinating butchery demonstration using modern butchery methods to add value and utilise more of the carcase. Rupert Dod, the farming partner of Philip Dennis Foodservice and Exmoor farmer will talk through the Exmoor Beef project and the importance of integrating the supply chain with an established catering butcher.

The workshop will cover the following key areas: Carcase Utilisation, Product Development, The Supply Chain.

Following the seminars you are invited to attend the tasting of some of the Exmoor Beef products.
